Recipe: Banana pancakes 🥞

Ingredients:

  • 3 eggs
  • 1 ripe soft banana
  • 3 large tablespoons cottage cheese
  • 1 pinch salt
  • 1 small pinch baking soda
  • 1 dl oats
  • 1 dl whole wheat flour
  • 2 tablespoons vanilla protein powder
  • Optional: a splash of milk if the batter feels too thick

Toppings:

  • Hazelnut chocolate spread
  • Raspberry jam
  • Fresh blueberries
  • Powdered sugar

 How to make banana pancakes:

  1. Add the eggs, banana, and cottage cheese to a blender.
  2. Blend until smooth and creamy.
  3. Add salt, baking soda, oats, whole wheat flour, and vanilla protein powder.
  4. Blend again until you get a thick pancake batter.
  5. Let the batter rest for a few minutes so the oats can soften.
  6. Heat a pan over medium heat with a little butter or oil.
  7. Pour small pancakes into the pan and cook until golden on both sides.
  8. Serve warm with your favorite toppings.

The pancakes should be soft in the middle with slightly crispy edges - the perfect balance for a cozy breakfast.

Tips for the best banana pancakes:

Use a very ripe banana - The softer and sweeter the banana, the better the flavor.

Adjust the batter - If the batter feels too wet, add a little more oats or flour. If it feels too thick, add a splash of milk.
